You really only need a few specific emulation setups to cover most of DOS gaming.

Late VGA and SVGA gaming plus 3D DOS gaming.
Put a boot menu on the 386 setup that loads alternate config.sys and autoexec.bat files. One extended memory only, one expanded memory only, one with both, and set it to automatically pick the both option after 10 seconds if you don't make a choice. You can go really hardcore and have alternate config files for having CD or mouse drivers unloaded, but with the modern replacements you'll have more than enough conventional RAM to go around.

Run memmaker once when done installing your drivers. Go custom, tell it to scan everything, leave nothing behind for Windows, and not keep previous info.
