Lucifer and the 1/3rd of the Heavenly Host betrayed God after Creation. Thus, Hell was created as the ultimate prison for Satan and the traitors, but until then they were left to their own devices, to wander freely within Creation as Kings of This World. Thus, guardians were required to protect Eden from evil.

God's whole thing is about free will and giving humanity a choice, as only through indeterminism can people come to freely love God. Thus, the option to choose to obey God and disobey Him is required in order for Adam and Eve to show their love to God. Will they obey God and not eat from the tree or will they disobey God and eat from it? Thus, eating from the tree isn't what gave Adam and Eve free will and independence, but it is something inherent to mankind. However, knowledge of Sin from eating from the tree is the first Sin. Because Adam and Eve disobeyed God and learned of Evil, their progeny were cursed with Sin and the full weight of death for their actions. However, God always loved humanity, and so a divine plan was put into motion. God would place His only begotten son among man and sacrifice him under excruciating pain, humiliation, and torture, as only a blood sacrifice could atone for sin. Thus, the sacrifice of God's own flesh and blood would be the only payment adequate enough to fulfill the price of all of humanity's sins. The old Covenant is annulled as God makes a New and Everlasting Covenant that applies to all races. In the End of Days, all the sinners who were and are shall be judged. Those who have accepted Christ will join the new and eternal Kingdom of Heaven on Earth. Those who reject Christ will deny Him as their King even as they march themselves into eternal damnation. The unjust shall receive justice and the suffering shall end.

It's just that in the setting, God somehow vanished and the Heavenly Host loses its shit. The demons wanted humanity around and supplanted morality and failed.
