I'm from South Louisiana and spent a lot of time in Cajun country OP. Here's some tips
First, I recommend you have a car because public transit is either shit or non-existent for the most part.
Second, I recommend you check out Lafayette because that has all the Cajun country + it's a actually city with shit to do. Not to mention it's the Cajun/Creole capital of Acadiana.
The small towns all around it have all the local places to eat.
North of Lafayette you got Eunice/Mamou/Ville Platte/Evangeline Parish but outside of Mardi Gras season (it's over btw) there's not shit to do there unlike Lafayette.
South of Lafayette is Abbeville that has a nice little downtown area and is right by Palmetto State Park which has good nature. Most land is private in Louisiana so the only place to really see swamps is paid tours or state parks.
West of Lafayette is a wasteland and farms. Nothings to do but gamble in Lake Charles that's still half abandoned.
East of Lafayette you got some small towns. I recommend driving from hwy 90 from Lafayette to NOLA to get a good feel for the area and its the scenic route. Morgan City has a cute main street but outside of that it's pretty run down. New Iberia is more or less the same as that.
Houma is a ghost town. Just a place for oil and gas workers. Nothing goes on downtown in Houma. Thibodaux is a nice college town with Nicholls State. Got a few bars on main street.
Outside of those places most Louisiana towns are strip malls and gas stations within suburbs pretending to be towns.

We got a small fishing village named Des Allemands literally french for "(By) The Germans)" but there's nothing there. Unless you got a boat. Think there's swamp tours out there.

It is. For us Louisianians, Mobile is just a pit stop before getting to the beach in Florida
My recommendation is anything off Hwy 90 from Lafayette to NOLA.
