oh boy, good luck (so far it looks like the logistics in Cortina might be a nightmare, and the prices will be even higher than usual)
Venezia is 100% worth a day trip, getting from Cortina to Ponte nelle Alpi can take a bit long but then from there it's less than two hours by train and when you get out of the station you are already in Venice proper. If you have a car instead it's just a 2 hours drive, but the parkings outside of Venice are overpriced as fuck.
A week in Rome or a week in the north are both valid options, the former would be more about the churches, the ruins and the restaurants (and the vibe of the city itself) while the latter would be more about nature, castles and maybe skiing if it's something you practice. There's also a lot of spa culture in Südtirol in particular that's been borrowed from the north, a stop in a place like the Caravan Park in Sexten might be worth your time.
Norther Italy is pretty extensive and every single province has a lot to offer so it's hard to give specific advice, Lake Como and Lake Garda are beautiful too, but since you'll be going in winter sticking mostly to the mountainous areas would be your best bet imo.
It's also hard to predict what some of the small locations where the olympic events are being held will be like, since some areas will be more or less off limits
