Have you never been out west before? You can practically drive to the base camp of most of the tall peaks. The tallest mountain in Colorado (#14rd in the country, #2 excluding Alaska) is literally a day hike unless you get AMS. Same goes for Mount Whitney, altho splitting it up among a few days makes it easier but permits can be the issue.

Unironically if you're fit 13mi with 2700' is completely doable in a day hike while being also able to relax and take pictures along the way. There are well established day hikes out west that are far longer and harder in terms of elevation. You need to be fit for them though.
