Most Rarifags only see her as a sex icon, and the few who don't would lack the confidence or charisma to even approach her when she's surrounded by the attention of other stallions
Rarity herself shows prejudice towards some non-ponies, doesn't towards others, so it's hard to say her stance on humans in general

Appulfags would have a fairly easy time getting close to her as long as they're capable of pulling their weight on the farm. AJ doesn't need to be constantly entertained like Rarity does, so reliability and good moral character would probably be enough.
AJ probably wouldn't entertain serious romance, though, since she needs foals to keep the farm going
>Fluttershy
She's a total animal freak, Flutterfags would be inherently interesting to Fluttershy by virtue of being human. Coupled with the fact that she's incredibly shy around stallions (and not non-ponies), she'd be very easy to seduce.
She'd likely be willing to fuck, too, and if not Flutterfags could probably convince her with enough pushing (if they themselves have the willpower).
>Pinkie
Pinkie is incredibly friendly and Ponkfags would have no trouble making friends. From there, it would just be a matter of trying to form a real emotional bond. Or not, if they just want to be fuckbuddies.
Pinkie comes from a traditional family, but clearly doesn't care much about modesty or limits to pleasure, so she'd probably fuck a Ponkfag if he told her it would be "fun".
>Twilight
Twilight has a similar position to Fluttershy, finding humans inherently interesting and being an untouched freak. Twilight has more pent-up sexual energy, though, and Twifags are typically more romantic than Flutterfags, so moving to the bedroom would be even easier.
Twilight would still be deeply ashamed and insist on keeping the relationship a secret, while Twifags are autists with huge egos and wouldn't be able to resist bragging or publicly expressing their love, so there's no way the whole thing wouldn't eventually blow up.
>Rainbow Dash
She probably wouldn't be comfortable considering sex with a human, and the average Dashfag would in no way be able to keep up with her athletically. If they were just drinking buddies, they might maintain a friendship, but there's no foundation for anything further than that.
