a mop is a type of sauce that differs from other sauces in that it's very wet and is applied once every hour or two periodically over the course of several hours, sometimes over even 24 or more hours, in order to build up a layer of "bark" on meat to keep in the moisture while making it tender. Brisket or ribs are almost exclusively made with a mop. And the term does come from floor mops as the large brushes used to apply it resemble them and were probably originally extra mops made or otherwise acquired for the purpose.
