Because the people are entitled.
They think that because they have put time and effort into creating a company they should automatically be rewarded with $200k a year and a relaxed backseat wealthy business owners lifestyle despite the business being barely more impressive than a food truck.
Often the food they produce is "pretty good" but the combination of requirements for a food facility (registrations, inspections, taxes, insurance, filings, mandatory additions etc) and their expectation of wealth, the prices go through the roof.
This creates a self imposed industry minimum to the pricing structure that afflicts not just the restaurateur but the landlords, suppliers, logistics etc, so by the time it comes down to the person who wants to buy a meal they have to pay for everyone who wants to just sit around and get passive income.

The whole notion that they might start up a shop and work 80hrs a week to get it off the ground and the end result will be a slightly higher than average wage with a loyal local customer base and a few loyal staff members that are paid a bit less than themselves is a completely absurd and foolish endeavour to them. The idea that you might start a business in a community and extract just enough wealth from that community to be average is completely lost on a generation of narcissistic cunts.
