>What music does she like?
I don't know what all kinds of music her world has. I know it has classical music, but Norad is pretty anachronistic in general, with medieval knights, refrigerators and tanks all sharing the same fantasy world. Who knows if there aren't more modern types of music. The only thing known about Dolce's tastes is that she's fond of bright, happy music, in contrast to her usual demeanor.

I don't know, but I think it'd be cute to give her headphones and not have them fit her ears, and see her try to fiddle around with the music player on a smart phone.
>Does she change her look often?
In-game, she only has portrait art for her normal dress, her swimsuit, her night gown and wedding dress. But it's suggested she wears a lot more than that. She likes making and buying clothes for Pico, so I presume she likes doing the same for herself. In one audio CD, she's trying to decide which dress would look better for a particular day.

I love how in most of her lines, she has this airiness to her voice, like there's no body to it. Whereas a good amount of Dolce's lines are like this, all of Pico's voice lines do this too, and I suspect this voice direction was intentional to mimic how she's a ghost, unless her actress talks like that in every role, and I just don't know better. Dolce by contrast has lines that do have some body to them, showing how she's the live one, I think. It might all just be a coincidence, but it's fun to think about. In the English version, both Dolce and Pico have a preference for calling men gentlemen, not that they don't use other terms as well, but the fact they have a preference for the more elegant term is cute. They also use lady for women.

Absolutely! All the time. I love thinking about when I first meet her for example.
