I put some thought into this while showering, and have come to the following conclusion: Especially in that time, the social ostracization that would result from having a hanyou child would affect a human female the most. A man is stronger and more self-sufficient, so if worst comes to worst, he can leave the village and live on his own. A female demon could also manage surviving by herself better than a human one could. Also, in most cases, the demon and the human didn't raise the child together, and single mothers are much more common than single fathers. The reason why that single mother is never written to be a demon is because, as I've already stated, there'd be less difficulties in the life of the mother and the child that way, meaning that the hanyou won't have a convoluted backstory to justify his actions. In a word, having the mother be a human allows for the most angst.
